    🛒 Ingredients

    • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes (or get already diced sweet potatoes)

    • 1 large onion, diced

    • 3 cloves garlic, minced

    • 1 red bell pepper, chopped

    • 1 yellow bell pepper, chopped

    • 2 medium carrots, diced (optional, for extra texture and sweetness)

    • 1 can (14.5 oz) diced tomatoes, with their juices

    • 2 cans (15 oz each) black beans, drained and rinsed

    • 1 cup vegetable broth (low-sodium preferred)

    • 1 can (15 oz) corn kernels, drained (or 1 cup frozen corn, thawed)

    • 2 tablespoons olive oil

    • 1 tablespoon chili powder

    • 1 teaspoon ground cumin

    • 1/2 teaspoon smoked paprika

    • 1/4 teaspoon cayenne pepper (adjust to taste for spice)

    • Salt and pepper, to taste

    • Juice of 1 lime

    • Optional Garnishes:

      • Fresh cilantro
      • Diced avocado
      • Vegan sour cream or a squeeze more of lime juice

    • Prepare the Ingredients:

      • Peel and dice the sweet potatoes into 1/2-inch cubes.
      • Dice the onion, bell peppers, and carrots (if using). Mince the garlic.

    • Sauté the Vegetables:

      • In a large pot or Dutch oven, heat the olive oil over medium heat.
      • Add the diced onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent and the garlic is fragrant.
      • Add the chopped bell peppers and carrots. Sauté for another 5 minutes, stirring occasionally.
