Optional Toppings:
In a food processor, combine tahini and lemon juice. Blend for 1 minute until smooth and creamy.
Add the garlic, cumin, olive oil, and a pinch of salt. Blend for another 30 seconds.
Add the chickpeas and blend until thick and smooth. Slowly add water, 1 tablespoon at a time, until desired consistency is reached.
Taste and adjust salt or lemon juice as needed.
Serve with a drizzle of olive oil, a sprinkle of paprika or cumin, and warm pita or veggies.
