🛒 Ingredients
- 2 medium apples (chopped, skin on – Honeycrisp or Fuji work well)
- ½ cup dried cranberries
- 4 cups mixed greens (spinach, arugula, or spring mix)
- ¼ cup chopped walnuts or pecans (toasted optional)
- ¼ cup crumbled feta cheese (optional)
- 2 tbsp red onion, thinly sliced
Dressing:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey or maple syrup
- ½ tsp Dijon mustard
- Salt and pepper to taste

In a large bowl, combine mixed greens, chopped apples, dried cranberries, nuts, red onion, and feta (if using).
In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey/maple syrup, Dijon mustard, salt, and pepper.
