    This Chili-Lime Shrimp Bowl is a fresh, zesty, and protein-packed meal that’s easy to make and full of flavor. Juicy shrimp are tossed in a bold chili-lime marinade and served over a bed of rice, avocado, black beans, and veggies for a delicious and balanced dish.

    🌱 Ingredients

    • For the Shrimp:
    • For the Bowl:
      • 1 cup cooked brown or white rice (or quinoa for a healthier option)
      • 1 cup black beans, drained and rinsed
      • ½ cup cherry tomatoes, halved
      • ½ avocado, sliced
      • ½ cup corn (fresh, canned, or grilled)
      • ¼ cup red onion, diced
      • ¼ cup fresh cilantro, chopped
    • For the Dressing (Optional):
      • ¼ cup Greek yogurt or sour cream
      • Juice of ½ lime
      • ½ tsp chili powder
      • Salt to taste

    🥣 Directions

    • Marinate the Shrimp
      • In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, red pepper flakes, salt, and black pepper.
      • Add the shrimp and toss to coat evenly.
      • Let marinate for 15-20 minutes while you prepare the other ingredients.
    • Cook the Shrimp
      • Heat a large skillet over medium-high heat.
      • Add the shrimp in a single layer and cook for 2-3 minutes per side, or until they turn pink and opaque.
      • Remove from heat and set aside.
    • Assemble the Bowls
      1. Divide cooked rice or quinoa between bowls.
      2. Arrange black beans, cherry tomatoes, avocado slices, corn, and red onion around the bowl.
      3. Place the chili-lime shrimp on top.
      4. Sprinkle with fresh cilantro for a burst of freshness.
    • Make the Dressing (Optional)
      • In a small bowl, whisk together Greek yogurt, lime juice, chili powder, and salt.
      • Drizzle over the bowl or serve on the side.
