For the Shrimp:
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- Juice of 2 limes (about ¼ cup)
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes (optional, for extra heat)

For the Bowl:
- 1 cup cooked brown or white rice (or quinoa for a healthier option)
- 1 cup black beans, drained and rinsed
- ½ cup cherry tomatoes, halved
- ½ avocado, sliced
- ½ cup corn (fresh, canned, or grilled)
- ¼ cup red onion, diced
- ¼ cup fresh cilantro, chopped
For the Dressing (Optional):
- ¼ cup Greek yogurt or sour cream
- Juice of ½ lime
- ½ tsp chili powder
- Salt to taste
🥣 Directions
Marinate the Shrimp
- In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, red pepper flakes, salt, and black pepper.
- Add the shrimp and toss to coat evenly.
- Let marinate for 15-20 minutes while you prepare the other ingredients.
Cook the Shrimp
- Heat a large skillet over medium-high heat.
- Add the shrimp in a single layer and cook for 2-3 minutes per side, or until they turn pink and opaque.
- Remove from heat and set aside.
Assemble the Bowls
- Divide cooked rice or quinoa between bowls.
- Arrange black beans, cherry tomatoes, avocado slices, corn, and red onion around the bowl.
- Place the chili-lime shrimp on top.
- Sprinkle with fresh cilantro for a burst of freshness.
Make the Dressing (Optional)
- In a small bowl, whisk together Greek yogurt, lime juice, chili powder, and salt.
