Dry Ingredients:
1 ½ cups oat flour (or rolled oats blended into flour)
1/3 cup unsweetened cacao powder (optional to make it double chocolate)
1 tsp baking soda
½ tsp baking powder
½ tsp cinnamon (optional)
¼ tsp salt
Wet Ingredients:
3 ripe bananas, mashed (about 1 cup)
2 large eggs (or flax eggs for vegan version)
1/4 cup maple syrup or honey
1/3 cup unsweetened almond milk
2 tbsp coconut oil (melted) or olive oil
1 tsp vanilla extract
Mix-ins:
1/3 cup dairy-free dark chocolate chips (plus extra for topping)
Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper or lightly grease it.
Whisk dry ingredients: In a large bowl, mix oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
Mix wet ingredients: In another bowl, combine mashed bananas, eggs (or flax eggs), maple syrup, milk, oil, and vanilla until smooth.
Combine: Add the wet ingredients to the dry and mix until just combined. Fold in chocolate chips.
Pour batter into loaf pan and smooth the top. Sprinkle extra chocolate chips on top if desired.
Bake for 45–50 minutes, or until a toothpick comes out mostly clean (a few moist crumbs are okay).
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
