In a large skillet over medium heat, cook ground meat until browned. Drain excess fat if needed.
Add onion and garlic; cook 2–3 minutes until softened.
Stir in black beans, corn, enchilada sauce, chili powder, cumin, salt, and pepper.
Fold in tortilla strips and stir until evenly coated.
Sprinkle cheese evenly over the top, cover, and cook on low heat until cheese is melted (about 5 minutes).
