1 cup almond flour
¼ cup ground flaxseed
¼ cup rolled oats (gluten-free if needed)
1 tsp cinnamon
½ tsp baking soda
¼ tsp salt
⅓ cup coconut sugar or brown sugar
1 large egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)
¼ cup melted coconut oil (or butter)
1/4 cup dairy-free chocolate chips (optional but delicious)
1 tsp vanilla extract
2 tbsp almond milk (as needed for texture)
Optional:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together almond flour, ground flaxseed, oats, cinnamon, baking soda, and salt.
Combine wet and dry ingredients. Stir in almond milk if dough seems too dry.
Fold in chocolate chips or nuts if using.
Scoop tablespoon-sized dough balls onto the baking sheet and gently flatten.
Bake for 10–12 minutes, until edges are golden.
Let cool on the pan for 5 minutes, then transfer to a rack to cool completely.
