    Enjoy your wholesome flaxseed cookies with a cup of tea or as a pre-workout snack! They're a perfect balance of sweet, chewy, and nourishing.

    🛒 Ingredients

    • ¼ cup rolled oats (gluten-free if needed)

    • 1 tsp cinnamon

    • ½ tsp baking soda

    • ¼ tsp salt

    • ⅓ cup coconut sugar or brown sugar

    • 1 large egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)

    • ¼ cup melted coconut oil (or butter)

    • 1/4 cup dairy-free chocolate chips (optional but delicious)

    • 2 tbsp almond milk (as needed for texture)

    • Optional:

      • ¼ cup dark chocolate chips or chopped nuts

    👩🏻‍🍳 Instructions

    • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

    • In a large bowl, whisk together almond flour, ground flaxseed, oats, cinnamon, baking soda, and salt.

    • Combine wet and dry ingredients. Stir in almond milk if dough seems too dry.

    • Fold in chocolate chips or nuts if using.

    • Scoop tablespoon-sized dough balls onto the baking sheet and gently flatten.

    • Bake for 10–12 minutes, until edges are golden.

    • Let cool on the pan for 5 minutes, then transfer to a rack to cool completely.

    • Swap almond flour for oat flour for a nut-free version.
    • Use maple syrup instead of coconut sugar (reduce liquid slightly).
    • Add raisins, sunflower seeds, or dried cranberries for extra texture.
