1 salmon fillet (4-6 oz) per serving
1 lemon, sliced
1-2 teaspoons olive oil
Mixed vegetables (broccoli, Brussels sprouts, bell peppers, or zucchini), cut into bite-sized pieces
Optional:
Preheat your oven to 400°F (200°C).
Place the salmon fillet on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
Arrange lemon slices on top of the salmon and around the edges.
Toss the mixed vegetables in a little olive oil, salt, and pepper, and spread them on the baking sheet.
Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
Garnish with fresh herbs before serving.
