    This creamy, high-protein mac & cheese is a delicious and nutritious twist on a classic comfort food, packed with protein from cottage cheese, cheddar, and high-protein pasta. With a rich, cheesy sauce and optional add-ins like chicken or broccoli, it’s a satisfying meal that fuels your day.

    • Cook the Pasta:

      • Bring a large pot of salted water to a boil.
      • Add high-protein pasta and cook according to package instructions until al dente.
      • Drain and set aside.
    • Prepare the Cheese Sauce:

      • In a blender or food processor, blend cottage cheese, almond milk, garlic powder, onion powder, smoked paprika, black pepper, and salt until smooth.
      • In a saucepan, melt butter over medium heat.
      • Add cornstarch (or flour) and whisk for 1 minute to create a roux.
      • Slowly pour in the blended cottage cheese mixture, stirring continuously until thickened.
      • Reduce heat to low and stir in cheddar and Parmesan cheese, mixing until fully melted and smooth.
    • Combine & Serve:

      • Add the cooked pasta to the cheese sauce, stirring to coat evenly.
      • If adding chicken or broccoli, fold them in now.
      • Taste and adjust seasoning if needed.
      • Serve warm and enjoy!
